B. Discuss how the design you chose supports your concept. (suggested length - 1 paragraph) The concept our restaurant has been striving for is casual, fast, and exciting dining. In order to satisfy this concept, our design had to be casual, easy to get in and out, and allow for customers to be a part of the food creation process. The restaurant design created for Big Rolls has an ample amount of free space for customers to navigate the restaurant freely. There also exists a number of casual seating options ranging from table tops to booth seating and long tables. The counter where food is prepared and ordered is similarly a casual and quick service experience. This is also where the patrons become involved in the food creation process. With items laid out in front of customers and sneeze guards protecting the food from any bacteria or germs, customers are able to select what is put inside of their Big Roll, or watch as their pre selected menu roll is created. Similar to restaurant designs such as chipotle or sweet green, Big Rolls has customers lined up along the counter where their food is created. This design seems to fit the fast, casual, and exciting themes that embody our concept.

D. Why did you choose the equipment you did for the back of the house? (suggested length 1 paragraph) The equipment chosen for the back of the house was based on a number of factors such as menu items, restaurant design, and budget. The most important deciding factor in choosing back of the house equipment was our menu. In order to follow through and create the items we produced on our menus, the correct equipment was necessary. Luckily for us, sushi preparation does not require a significant amount of cooking equipment. Much of our equipment is for storing and presenting the ingredients that are put together, in front of the customer, to create a Big Roll. One of the more crucial items necessary for this process is a sneeze guard. This vital piece of equipment allows customers to view the food that is being made (choosing various ingredients), while ensuring non of the food becomes contaminated. Restaurant design also played a role in picking the necessary equipment. Knowing the layout of the restaurant allowed for certain pieces of equipment like a drink case to be purchased and set up appropriately. Lastly, budget was somewhat of a factor. Even though there was no set budget when picking equipment, keeping cost down would allow for potential investors to see that our restaurant is a low cost startup. Being able to provide an exciting and new eating style while keeping fixed costs down should be appealing to new investors.
