INTRODUCTION If we heard the word “ketchup” we always think of something that is red that is sweet and tangy sauce that can be used in various kind of food. This condiment has been used for a long time already and up to now it is still in use or in need in our everyday life most especially when we are eating. The word “ketchup” comes from the Hokkien Chinese word “Catsup” (kê-tsiap) this word was derived from fermented fish. But then a man named Henry John Heinz invented ketchup by adapting a Chinese recipe for so called Cat Sup, but Mr. Heinz developed a thick sauce made from tomatoes, special seasoning and starch, and which was called “tomato ketchup” it is very known whole over the world, and it is a popular condiment since it was founded.

THE BANANA KETCHUP Hearing the word “banana ketchup” might be normal to us Filipinos but in other country such us United States of America who are fondly to know tomato ketchup would feel shocked or amazed if they know that there’s a banana ketchup. Since banana ketchup was originated in the Philippines and it is widely used here as a condiment and alternative with tomato ketchup. But how does this invention was invented?

Way back from the time of World War II, where Filipinos and United States soldiers fought against the Japanese. This is the time when Maria Ylagan Orosa invented the Banana Ketchup. There was a shortage of tomatoes during this time and to solve this problem they looked for a good alternative way or an alternative product to make a ketchup, but then bananas were known to be plentiful and topped the list and with this Maria Ylagan Orosa came up with something and used the bananas as an alternative to make a ketchup instead of tomato.

Bananas is known to be yellow by its peel and its flesh is quite light brown. So, originally the color of the banana ketchup is more on natural yellow with hint of light brown (Image 2). Obviously, this condiment uses banana as the mainly ingredient but it should be mashed, along with sugar, vinegar, and other spices. But its original color is something that is unattractive or unappetizing so they often dyed it with red to resemble tomato ketchup (Image 3).

During the year of 1942, banana ketchup was first mass-produced commercially by Magdalo V. Francisco Sr. who founded the brand name Mafran which he registered with the Bureau of Patents. Francisco sought funding from Tirso T. Reyes to expand his business and thus, the Universal Food Corporation (UFC) was formed in 1960.

WHO IS BEHIND THIS INNOVATION? A war heroine named Maria Ylagan Orosa,

technologist who become a sponsored scholar in University of Washington and earned

her

bachelor’s and master’s

degree in pharmaceutical chemistry. She is known to love her country since, Image 5. Maria Ylagan Orosa

instead of accepting a job offering in the

United States, she didn’t doubt to went back home to the Philippines and help her fellow Filipinos. She dedicated her life to uplifting the Philippines through food innovation. And one of the notable works of Maria Ylagan Orosa is the Banana Ketchup that has been dominating some other country and our own land since the time it was commercially produced. And because of this innovation she has been recognized by lots of Filipino people knowing that the Banana Ketchup was originated here in the Philippines. And because of this she has been featured in many books either in internet. On November 2019 Google fetes Maria Ylagan Orosa with doodle for his 126th Birthday.

This invention of Maria Ylagan Orosa really contributed and it really helped lots of people. Her initiative has given us hope. Knowing that this was invented years ago, and now it is still in use most especially to those who are under the food business industry. This is also known to be cheaper to buy and cheaper to make and produce than the original tomato ketchup, in which is it really great and good alternative ketchup when you are or your business is saving money to buy a condiment/s.
