As summer is knocking on our doors, the humid yet fresh air of Cabiao is really hunting me. Nueva Ecija is closest to my heart because it is the province where I grew up, for me it is where the world ends back then. But it turns out that it I am just in my nutshell when the busy streets of Metro Manila came into the picture. And whenever I do the talking about to my dearest province I couldn’t help it but miss the foods that I used to taste every now and then for the past years. There is one delicacy that our town is really proud of, the pure Carabao’s milk pastillas of Ayings. Aying’s is popular here in Nueva Ecija for their high quality and delicious homemade Pastillas m

locals here in the area. Not mentioning the native breakfast here  carabaos milk, tuyo, and rice. Definitely, the kind of breakfast that every Manilenyo’s out there would want to try. Pastillas de Leche is one of my favorite native delicacies or sweets and is one of the original flavors of Ayings Pastillas when they first started their business. The milk sugar and lime zest are boiled together until thickened, then cooled and formed by hand into little mini-logs that are often rolled in more granulated sugar before they are individually packed in paper. If the mixture is allowed to boil to the point that it starts to get darker in color, almost moccha like, this is known as “tostado.” Bulacan seemed to be the epicenter for pastillas production but lately some of the best pastillas made from pure carabao’s milk come from Nueva Ecija. Some commercially made pastillas shortcut their recipes by adding condensed milk that results in a faster cooking process but also an extra sweet outcome. But Ayings ensures that they are using pure carabao’s milk in their pastillas.

Over time, Aying’s Homemade Pastillas currently offers additional 5 flavors that include Queso, Ube, Langka, Buko Pandan, Caramel and Malunggay. Flavors can be distinguished by different colors of the packaging. But if you want to taste all the flavors you could just buy Assorted Pastillas in a box. They are selling a box of 30 for P 150.00 each. Recently, Cashew Pastillas balls are few of their latest innovations when it comes to the traditional pastillas.

Aside from pastillas, the main highlight of their store during summer is the original mixture of Aying’s Halo-halo. Halo-halo is a popular Filipino dessert that is compose of a mixture of crushed ice and evaporated milk with boiled sweet beans, sago, nata de coco, and other fruits served in a tall glass or a bowl. The special HaloHalo is served for only Php 50.00 per order. But what makes it more special, aside from the creaminess of the carabao milk, instead of putting the usual Leche flan Ayings replace it with their delicious pastillas in cheese and ube flavour. Also, you can try their smoothies which are topped with different flavors of their pastillas.

As their business grew larger, different varieties of “ pasalubong” and “miriendas” where available as you visit their stores. Currently, Ayings have two branches in Nueva Ecija which are located at San Fernando Sur, Cabiao and Bucana, Gapan. The owners made the business successful through their hard work, determination and passion to help others while making their goals came true. Judging the surface of how sweet the success of their business is. You would be surprised that it was started from a bitter journey. The once dark and bitter life its owner, which is a former drug addict and alcoholic is now a life full of color and sweetness, thanks to the success he reaped from making pastillas.

Ariel 'Aying' Viñas, the proud owner of Aying's Homemade Pastillas in Nueva Ecija, grew up without a father's guidance and was lured into the world of drugs and alcohol as a teenager. In the early age of 14, Aying was forced to work and help his mother in their homemade pastillas business. But instead of saving up for his future, he said he used up all his earnings on alcohol and illegal substances. Aying used to dance with the devil, causing him to suffer with severe accident. He only began turning the corner when he met his wife, Nancy, and decided he had to clean up his life for the sake of love. With the days of junkie long behind him, Aying managed to get out of the quicksand he was once half buried. And today, their Home made pastillas is one of the Nueva Ecija’s classic. A great man once told me that the secret ingredient to a successful business is something that is intangible to its customers. Put your heart, mind, and soul into even your smallest acts. This is the secret of success. I have been a student at Polytechnic University of the Philippines for four semesters, and over the course of my stay I have grown and learned more than I thought possible. I came to this school from General De Jesus College in Nueva Ecija already knowing that I wanted to be a business woman. My naive high school self simply thought you did well in school, applied for jobs, got the job, and that was that. However, this is not as simple. There are hundreds of options for making revenue, including opening a business with someone, going through a sole-proprietorship, getting a job yourself, or investing in stocks. It is not easy to understand certain things until you really undergo it. Entrepreneurship is one such thing. Understanding business is not an easy task. May be education and reading about it develops your knowledge but you will never learn until you run one of your own. I gained such helpful information of running a business through this episode. And reflecting upon this episode, these vast options intimidate me, but also inspire me. It inspired me to pursue my dreams to become a successful entrepreneur of my own. Businesses always are born on ideas and a new innovative idea in any existing business can make a wide change. Be the game changer because success is not what you have, but who you are. So no matter how many times you’ve failed, it will not stop you to achieve your goals if your determination is stronger than failure....
