Objective: The purpose of the dietary analysis project is to provide students with practical experience in estimation and analysis of dietary requirements. Each student will be able to create a nutritional profile, based on individual data such as height, weight, daily food intake, and activity level. By applying concepts learned in class, students will be able to compare their personal profiles to the current U.S. dietary recommendations, and identify possible areas of improvement relating to diet and health. Assignment Overview: To begin your diet project, you will be required to setup and access an online NutritionCalc Plus profile. You will need to complete Daily Food Records for 3 days. You will enter the food/beverages that you consumed into NutritionCalc Plus. Finally, you will complete a set of dietary questions and upload your projects to Canvas by March 8, 2018. Late submission grading as follows: 15 points off per day after March 8 due date (ie if late within 24 hours of the due date = minus 15 points; if late between 24 and 48 hours of the due date = minus 30 points; etc.). There will be no submission after March 13, therefore the grade received will be a ZERO.

Part I- NutritionCalc Plus Setup To complete this assignment you must use NutritionCalc Plus, the online version of the McGraw-Hill dietary analysis series. The link is available on the Connect page (same page where you have assignments). Set up your individual profile using the “Profiles” tab and by clicking “New” to enter your user information. Part II: Daily Food Records Dietary Records – This project will be based on a 3-day dietary record which means you must record what and how much you eat and drink for 3 days.  

Record the amount and a description of the food/beverage. Write down what you eat (or drink) at the time you eat it to avoid forgetting things such as snacks and water intake. DO NOT include any vitamin pills or other supplements. Record portion sizes as accurately as you can; you can estimate serving sizes, use a scale, and/or use food labels. It is best to record portions in serving sizes of ounces, cups, teaspoon, tablespoon, etc.

Be honest in collecting your dietary information. You are NOT being graded for the type of diet you consume. Try not to change your eating habits while you are keeping your record. The object of this project is to analyze your current daily eating pattern.

Part III: Food/beverage Entry and Required Printouts NutritionCalc Food logs – Entering foods/drinks into NutritionCalc:      

Use the “Intakes” tab and begin by selecting a date in the calendar to the right of the screen Search the food database for the best matching food/beverage description To add a food/beverage, click the green plus icon to the left of the link You will be prompted to enter the meal (i.e., breakfast, lunch, dinner, or snack), quantity, and units* for each selection you make Follow this same procedure for all food/beverage items you consume If you find that you have made a mistake, select the food/beverage and change the meal, quantity, units, or check the delete box to delete. Click “Save intakes” to complete the change

*The term “each or piece” means one unit. For example, if you wanted to add one egg, enter 1 as the quantity and “each” as the units. Further, entering two as the quantity would specify two whole eggs and so on. NutritionCalc Printouts Reports to turn in:   

Select “Reports”, then select “All Daily Reports” from the menu on the left Check each individual day; then select “Update Preview” just below the checkboxes Click “Print” to the right of the screen and save as a .pdf file.

These printouts will include the following: Personal profile page, Recommendations, Bar graph report (in the form of a 3-day average), Spreadsheet report (for each day), Calories and fat (3-day average), Calories assessment, Nutrition Facts (3-day average) and MyPlate (3-day average). For 5 additional bonus points, students may also submit 3 separate printouts of their daily food log (one for each day). These printouts must be complete and accurately reflect the information from the Diet Analysis printouts. Part IV –Diet Project Questions Diet project questions will be posted on Canvas. Answer questions on question sheet. You can save and upload as Word or pdf file.

Part V- Submission Requirements Your pdf file for your dietary printouts along with the answers to the diet project questions (in a Word or pdf file) will be submitted on Canvas. Do not email or turn in hard copies of the printouts and answer sheets.
