Running Title: MODULE 11 LIVE CLASSROOM: COMMUNITY/GLOBAL NUTRITION 2 What types of resources are available to communities in terms of learning about nutrition and healthy eating? There are many resources that are available on a community outreach level that assist many different demographics in supporting healthy nutrition practices. Many of these programs are federally funded and available to those that may not be able to access assistance on there own fruition. While a lot of the programs are income based, there are others that are available to all, regardless of economical status. The supplemental nutrition assistance program, or SNAP is a federally created program that issues monthly electronic benefits that can be used at markets, grocers and many food stores to assist in purchasing healthy and nutritious foods (University of California, n.d.). While SNAP is made available to those of only qualified households and individuals, it creates means for them to access nutritional needs they may have not been able to otherwise. WIC is another federally-funded health and nutrition program that was created for women, infants and children meant to aid in purchasing healthy, supplemental foods by providing checks meant specifically for only specific nutritious foods. Individuals that qualify for WIC must meet specific income guidelines and must be either an expectant mother, new mother, infant or children under the age of 5 years old (University of California, n.d.). As mentioned, while many community resources are income-based, others like local farmers markets or community food banks aid all and not only provide nutritious, healthy food options, they are also support many communities on a small, local level, helping many thrive. What types of resources are available to global populations in terms of learning about nutrition and healthy eating? While a community level reaches hundreds of thousands, global nutrition initiatives reach out to the millions. There are different global health & nutrition agencies such as WHO, the

Running Title: MODULE 11 LIVE CLASSROOM: COMMUNITY/GLOBAL NUTRITION 3 World Health Organization, that focuses on global nutrition epidemics as a whole like their approach on childhood obesity being one of the largest public health challenges, they invest in children’s health by helping meet the global health targets and substantially reducing the predicted health and economic costs of obesity (CDC, 2018). UNICEF addresses malnutrition globally and creates programs in more than 90 countries working to make good nutrition a reality to the children, families and demographics that are in most need of it (CDC, 2018). UNICEF tackles micronutrient deficiencies assisting in treating and preventing severe acute malnutrition worldwide and incorporate nutrition into the work of other partners such as health, water and sanitation, among many other initiatives. The Helen Keller International organization, GAIN, which is the Global Alliance for Improved Nutrition and Save the Children are all other global outreach organizations that continuously work to improve the nutrition condition of all the corners of the world (CDC, 2018). What are three challenges communities and global populations have in accessing these resources and how can these be overcome? While there are many nutritional hardships in reaching populations on a community or global level, there are so many organizations that continuously attempt to tackle these challenges. Foodborne diseases are a challenge that can be deadly, costly and although they eventually come to an end, they can cause massive outbreak of illness (Chan, 2011). Although there is considerable recognition and recalls when this happens, it is necessary to begin at the source and rather than taking the shortcuts in farming to produce to the masses, overcoming foodborne illness potentially begins at rewinding back to our roots that reduces use of pesticides and hormones, promoting quality over efficiency. Global nutrition deficits also create an epidemic challenge on an international level. The lack of healthy nutrition is increasingly proving that the

Running Title: MODULE 11 LIVE CLASSROOM: COMMUNITY/GLOBAL NUTRITION 4 deficiencies in essential nutrients are the underlying cause of an approximate 3.5 million deaths each year (Chan, 2011). While we have many organizations reaching out to the lower economic populations, it should be a focus of leadership, such as politicians, more than ever. The challenges are difficult and increasing, but another challenge that often goes overlooked is that of increasing food prices of healthier, organic based foods. Marketing and the increasing knowledge of healthy living have skyrocketed prices of proper nutritious foods, causing the poor and vulnerable populations that need it the most to suffer (Chan, 2011). Although there are resources available to lower income families in the US, what about the middle class? There should be initiatives made that create a better pricing structure for organic and whole foods aside from the boutique stores that are not maintainable in stocking the refrigerator. What specific nutritional knowledge and skills that you learned about in this course had the most impact on you personally? This semester has had me dive personally into not only my habits, but those of my family as well. One of the most impactful things that I have learned, particularly being a mother of two small children, is that health in the home starts at the table. Nutrient, food group and portion control I have realized is the most beneficial when raising growing boys. With as many diseases that we have covered, most all are nutritionally influenced. As much as I would love to picture a world free of disease and not one that is riddled with increasingly new challenges, that is not the case. If I had to choose the most cemented knowledge, amongst so much, it is that I have to pay close attention to stimulating my children through nutrients that they need, and most importantly myself, because I am the leadership within my household. I now know how to feed my body to create the most secure balance of health and energy, which obviously I need to keep up with my boys.

Running Title: MODULE 11 LIVE CLASSROOM: COMMUNITY/GLOBAL NUTRITION 5 Were there any areas that you wished you could have learned more? If so, what were they? I cannot, personally, say there were any areas within discovering nutrition that lacked or that I did not gain knowledge. The only thing that I leave this with, is my yearning to know more. By “more”, I am referring to more in-depth knowledge of specific conditions. I have taken so much away from this course and already have been able to advise many of my family members and friends of nutritional areas that can enhance their lives. Although I have learned so much, I am looking forwards to diving into the study of nutrition even deeper.
