Food Technology Program Physical Properties of Foods Faculty of Agriculture Quiz 1, April 2009 Cairo University Time Allowed: 60 min A) Define the following terms: 1- Sphericity 2- Aspect Ratio 3- Apparent volume B) Calculate the true density of spinach at 20°C having the composition given in The table below: C) A pycnometer consisting of two chambers of equal volumes (35 cm3) was used for the determination of bulgur density (setup is shown in the figure below). Ten grams of bulgur was placed in the second chamber of the pycnometer. Valves 2 and 3 were closed and air was supplied to chamber 1. Valve 1 was closed and pressure P1 was read as 134 kPa. Then, valve 2 was opened and the new equilibrium pressure P2 was read as 74.4 kPa. The same bulgur is poured into a graduated cylinder and 100 mL of the bulgur is determined to have a weight of 74 g.
