The Effect of Apple Cider Vinegar on Celery Growth This experiment aimed to determine how pH affects celery growth in order to see how different environments affect growth rate in plants. Pieces of celery were placed in separate containers with no solution, only water solution, half apple cider vinegar and water solution, and only apple cider vinegar solution. Apple cider vinegar has a pH of 2 to 3 (1), and the brands of apple cider vinegar used were Mother Earth Vinegar and no name brand. Four replicates of each were performed. Observations and measurements of growth were taken every two days. After two weeks, celery in the water solutions generally grew the most, while the celery in no solution grew a small amount, and the celery in the solutions containing vinegar did not grow. This suggests that the lower pH (or a molecule in the apple cider vinegar) inhibits growth in plants. According to Zhou et al (2), when plants are exposed to acid, their synthesis of chlorophyll can be inhibited. This would inhibit photosynthesis, and therefore decrease the amount of energy the plant is able to generate. The celery in the apple cider vinegar likely did not grow because it was unable to generate enough sugars from photosynthesis. Furthermore, in the same study, acid affected the root membrane permeability of the pine trees studied. When placed in a pH lower than they could tolerate, the integrity of the root membrane was destroyed. This could also explain why the celery in the vinegar solutions did not grow: they were not able to take in the necessary nutrients, due to their cell membranes being damaged. For future experiments, lower concentrations of apple cider vinegar (or other vinegar types) should be used with the celery, as it is possible that celery could grow when exposed to a lower concentration of acid.
