1. List the six classes of nutrients. Which are macronutrients and which are micronutrients? Which are the calorigenic (energy yielding) nutrients? The six classes of nutrients are carbohydrates, lipids, proteins, vitamins, minerals, and water. Of those, proteins, fats, and carbohydrates are considered macronutrients (calorigenic nutrients) because they provide us with calories, a source of energy for our bodies, to make it through each day. Micronutrients, on the other hand, are substances that we as humans need to consume in much smaller amounts for proper bodily functions but provide no energy. Of the list, vitamins and minerals are considered micronutrients. 2. What are the ten categories that influence food choices? The ten categories that influence food choices are: Personal preference Habit Ethic heritage or tradition Social interactions Availability, convenience, and economy Positive and negative associations Emotions Values Body weight and image Nutrition and health benefits

3. Thinking about food choices what was the first thing you ate or drank today? How might that choice have been influenced based on the factors discussed in chapter one? This morning, I got up early to go to breakfast before my 9:30 EMT class in Costello Sports Complex. I ordered a bacon, egg, and cheese on a plain bagel and a flavorless seltzer. I ordered the bacon, egg, and cheese on a plain bagel because I knew, though not perfectly healthy, it would provide me with enough nutrients to get me through my track workout later today because I tend to get sick if I don’t eat beforehand. As for the seltzer, I really just like the feeling of the bubbles but don’t like soda. When I used to drink soda I always felt “icky” afterwards, so I made the decision to cut it out of my diet completely. I’m not a health nut, but I try to be somewhat conscious of my eating habits and hope it might show positive results in my workouts as well.

4. How many calories do the following nutrients have per gram- Carbohydrates, Protein and Fat? Carbohydrates: 4 Protein: 9 Fat: 4

5. Define "Energy Density". Energy density is a unit of measure for the number of Calories (kcals) per gram. A meal of low energy would have an energy density of around 1 kcal/g while a meal with a high energy density would score around a 3.5 kcal/g.

6. Look on the inside front cover of your textbook. Why is the Recommended Dietary Allowance (RDA) given for some nutrients and the Adequate Intakes (AI) given for others? To quote the textbook, “The RDA reflect the average daily amount of a nutrient considered adequate to meet the needs of most healthy people. If there is insufficient evidence to determine an RDA, an AI is set. AI are more tentative than RDA, but both may be used as goals for nutrient intakes.”...
