Wine Bar Ideas, Insights, Themes, Etc. On Thursday afternoon I sat down with Daniel Baxter, Director of Strategic Planning for Sandstrom and Associates. I told him about our wine bar assignment and showed him our creative brief. He enjoyed the creative brief and thought that we did a great job on it. He did however propose ideas and thoughts regarding the wine bar project. Here they are:  Sensory aids for wine tasting/smelling. Having our servers carry around cards or boxes that have different scents that are related to the tastes that wine has in different stages of drinking it, similar to a wine aroma wheel. The servers can make notes of what you like or don’t like and suggest certain wines based on that. 

Wine served directly out of the cask or barrel. Cool look.



$1 wines. Bars have $1 beers, why not do the same with wine.

 He mentioned that when he heard millennial wine bar that he heard three things going on. Millennials. Wine. Bar. He suggested looking at each of these individually.  Creating an atmosphere that forces interaction. Long tables where you have to sit next to strangers. This creates conversations between groups or individuals who do not know one another. It creates a social atmosphere, similar to Montage. 

Serving wine based liquors, such as cognac, brandy, etc.

 Millennials like to appropriate other generations and make it their own and to repurpose old things or ideas. The example he gave me was millennials walk around wearing bow ties that their grandfathers or great grandfathers would wear, or use ideas and themes from the 1960’s and 1970’s but put their own twist on it. 

Sweet and Savory snacks. Moonstruck Chocolates and cheese plates, cheese and pastry plates.

 Maybe do a sports wine bar. We could play rugby, cricket, Formula 1 racing, polo, curling, etc. This creates a new theme that could attract different clientel. 

Use borrowed interests to attract customers.

 Binge watching events. Maybe on Saturdays we play an entire season of a certain TV show, Game of Thrones or others. Start in the early afternoon before millennials hit to town for the night. 

He also asked, “Do we have to focus so much on wine?”

I came up with a possible name for the wine bar after I left his office.

Flix and Chill(ed) Wine. Obviously resembles NetFlix and Chill....
